Recipe for cake
1 cube unsalted butter, softened
1/3 cup olive or grape seed oil
1 1/2 cup sugar
1/2 cup buttermilk
1/4 cup brewed coffee
1 tsp vanilla
1/3 cup unsweetened cocoa powder
2 1/2 cups all purpose flour
1 tsp baking soda
1 tsp salt
2 cups grated zucchini
1 cup milk chocolate chips
In large bowl, beat together butter sugar and oil till creamy. Beat in eggs, butter milk, coffee and vanilla.
In a medium bowl, sift and mix well together flour, cocoa, bkg soda, and salt.
Stir into wet mixture and gently mix. Gently fold in zucchini and chocolate chips.
Pour into oil-sprayed 9×13 pan.
Bake at 325 for 1 hour or until toothpick comes out clean- done!
